Once the file it at the consulate, CIS (INS doesn't exist anymore) is
completely out of the picture.

They have the whole file that they got from CIS (in fact, part of the
immigrant visa is the file in a sealed envelope, which is how it gets
returned to CIS.) But, there is a new tax year, so they presumably
want this year's tax return, and I guess that is not in the file...
If you are so afraid of your parents knowing how much you made, why don't
you go to the consulate with them and hand it to them in person?
