I explored the same options myself about 6 months ago and posted similar
questions on this forum. The conclusion that I came to, thankfully, was
that the quickest and safest way to do things was still to go the K1
fiance(e) visa route. You're correct that the red tape is a nightmare but
unfortunately it's a necessary evil at present. At least once you've gone
through it all you'll realise just how much you love your husband and how
committed you both had to be to each other in order to see things through,
plus you get the added bonus of not looking over your shoulder due to
"loopholes" and being able to return to see your family in the UK much more
quickly and easily.
We opted to hire a lawyer in the end as some of the advice on the USCIS
website seemed to contradict itself and/or be out of date. Although pricey,
I'm convinced we'd be just now receiving an RFE and be delayed further if we
hadn't hired him, rather than receiving my information pack from the London
Embassy. If you can spare the money I'd recommend it - for me, paying the
extra has been worth the peace of mind and the stronger likelihood that I'll
be living with my future wife a lot sooner than if we'd tried it alone.
