Default Greencard is limited to be outside of the US to 1 year.

Do immigration record a date of departure or only a date of arrival
when travel out of the US?
How they know how long person was ouside of country if nobody makes
any records in a port of entry when leave the US?

The airlines report the departure information to DHS. They have to by law.

What is it really you are planning to do for asking such a question,
especially the second one?
People who abide by the rules and regulations of US immigration don't really
have a need to know on how DHS could find out how long somebody has been out
of the country.
You're not trying to find out how to defeat the system, are you?

Give us a valid reason for wanting to know how DHS could find out.

If you depart by land, and have no I-94 or I-94w to turn in, they
won't know when you left. If you depart by air, your name and details
are recorded by the airline. Assume when you give your details to
anyone, they are recorded and submitted to other government agencies
with an interest in that information. If you assume that, you aren't
going to trip yourself up, just assume they know everything.

Now that being said, if you depart by land and they don't know you
left because you had no card to turn in, the onus is still on you to
prove how long you've been out of the country. If you get caught lying
or they just don't believe you... your GC is at risk.

At least for leaving to Canada by land they know, since they have a data
exchange with the Canadians.
Bottom line, always expect that they know when you left.

That depends on whether or not the Canadians are bothering to record
data. While I'm sure they capture the plate on my vehicle, it's not my
car, and the only way they'd know is because I arrived in the US in
that car. Had I taken someone else's car while I was down there for a
one way trip, they wouldn't know, unless they took my ID. I get asked
to present ID only 50% of the time. Since it's obvious I'm not driving
my own car (because it's my spouse's), I can't say I'm impressed by
their lax attitude to not check things out and make sure I'm
admissible back into Canada.

I agree with your advice, expect they know everything. The worst that
can happen is not being allowed back if the absence from the US is too
long, then the OP would lose his GC. If he tried to cover that fact
up, things can get a lot worse very quickly.
