As far as Question #1 goes, yes, you will need to inform DIMIA (assuming
you haven't gotten the sticker in your passport yet). They 'link' your
visa number to your passport number, and they also print your passport
number on the visa sticker, to help discourage fraud.
Question #2: No idea.
Question #3: I would assume so, but it might be wise to send a fax as
well. If I understand the situation correctly, you haven't actually
received had your visas evidenced yet - you should probably send a cover
letter explaining the situation when you send your passports to the
Consulate, just to try & avoid any delays. I'm not sure how long it
would take for DIMIA to pass the information about the new passport
number on to your local Consulate/High Commission - you might be cutting
it a bit close with a 1st October departure date!
