Default F1 - AOS required

Hello,
This is our problem :
- I am a student with F1 visa graduating this May.
I do not know whether I will be in Europe or in the US next year for a
postdoc (in which case I would normally use OPT and then ask for H1).
- My fiancee is a US citizen.
We have planned our wedding ceremony for this summer in Europe but to
get married in church we need to get married legally first.
So, we plan to get married here legally. Do I have to ask for AOS once
we are married?
I do not really have immigration intent as I don't even know yet were
I'll work. Even if I work, I am not necessarily interested in the green
card. On the other hand, if I ask for AOS it is very likely that the
advance parole process won't be ready by this summer - and this would
jeopardize our wedding ceremony!!
Any advice ?
If I do not have to apply for AOS, can I travel freely to Europe, come
back on F1-OPT ?
When should I AOS, say, if I stay here ? After getting my H1 visa ?
before ?
Also, does INS know if we get married here ? After all, we just get
married to have the church ceremony ...
Thanks for your help, we're really lost.
