It seems that you have two possibilities:
a) Have a civil ceremony ASAP, he can file for AOS and an EAD and,
hopefully, won't have too much time in between the TN visa expiry and the
EAD coming through. You can then have your "proper" wedding in August as
planned.
b) Have him go ahead with your current plans, being truthful on the
application about marrying you (because not doing so could *really* screw
things up) and take your chances that he'll be stuck in Canada.
It's not ideal but I think I would go with option (a).
