Bring all your employment-based documents to the AOS interview
anyway. You never know what the officer will ask for, better to have
it handy than not.
Even if your interview is fine, and your paperwork is all good, but your
security check (name check) is not finished, you will not get approved
nor will you get a stamp in your passport. You will continue being
"pending AOS" until your security check is finished.
Have a look at the Guide to Naturalization (available at
www.uscis.gov
somewhere). That has all the information you need to figure out when
you can apply for citizenship based on the scenario you presented.
