I think that the places you may visit depend on the way you arrange
the tour and the order you visit rome,florence and venice.
I think that if you plan to visit places outside the big cities
you've to rent a car or plain your trip very well, knowing in advance
the best way to reach your destination (trains are better for long
trips but could also be used to reach middle-sized towns and there is
a network of local bus companies that connect cities to small
villages, usually information about this kind of connections and
timetables are not simple to find on the internet!).
I like Toscana and there are many great places you can visit there
that are small towns full of history (and places where you may eat
and drink very well).

It's an hotel with a great restaurant (I've been only at the
restaurant). Not cheap, but a very nice place and great food.
Other nice places in tuscany where I've been are:
Siena, Pisa (not small towns)
Volterra, S.Miniato (go to it to the "antro di bacco", just under the
grocery shop in the middle of town :)), Monteriggioni.
The most famous beaches of toscana are in the north (Viareggio, Forte
dei Marmi) or near the Argentario. Isola d'Elba is also famous for
its sea.
On your way to venice you can avoid the autostrada (highway) and
cross the appennini from Firenze to the region called Romagna.
There I've been in different places but the one I like most is
Brisighella (small town with very nice city center and great places
to eat). From romagna you can rech Venice in a couple of hours of
driving.
If you can flight back from Milan you may visit the lake region.
The most famous (and biggest) lake is the lake of Garda.
I live between Maggiore lake and Como lake so I know best those
places and I can suggest daytrips to Stresa, Angera, Como, Bellagio
and other beautiful places on the lakes and in the sourrounding
areas.
